I follow a low carb diet plan and have been since Spring of 2016. Many health reasons why I made that choice 🙂
If your kids are like mine, they want a ‘treat’. I have been making a version of these for three years but only with oats. Since flipping to a low carb diet, with more healthy fats, I had to make a change to the recipe.
2.5 C Rice Krispies cereal
2T coconut oil
2T grassfed butter
1teaspoon vanilla extract
1teaspoon xylitol crystals
1/2 c almond or peanut butter
Combine and either press into pan or make bite sized balls. refrigerate for 15 min.
To fancy it up, and still stay on a low carb diet, you can drizzle with 80% dark chocolate. We heat our chocolate bar in a glass bowel that is sitting in a pan of hot water. The key is not to let the water get too hot.
